Bubble & Squeakmas

  • Olive Oil
  • Leftover Veg and Potatoes
  • Tomatoes
  • Field Mushrooms
  • Edwards of Conwy Bacon
  • Edwards of Conwy Sausages or Chipolatas
  • Eggs


  1. Preheat the grill to high. Put a little oil into a frying pan over medium heat. Add the leftover veg and potatoes and start mashing them together. Cook for 15 - 20 mins and continue mashing them so they break down and become crisp on the bottom.
  2. Half the tomatoes and put these onto a tray with the sausages and place under a grill for 4 mins.
  3. Turn the sausages over then add the mushrooms to the tray face up. Lay the bacon onto the tray and cook under the grill for 7 - 8 min, or until the sausages are cooked through. When these are cooked, turn the oven to 180°C/350°F/Gas Mark 4 and put the tray at the bottom of the oven to keep the food warm.
  4. Make some spaces in the middle of the bubble and squeak so you can crack the eggs into these. Cook until the eggs are to your liking and then serve.
