Serves: 4 Time: 40 mins

  • 25 Traditional Pork Cocktail Sausages
  • 2 red chillies, finely chopped
  • 100ml maple syrup
  • 2 tsps cider vinegar
  • 20g ginger, peeled and finely chopped
  • 2 tsps sesame oil
  • Sesame seeds, for sprinkling
  • Handful of coriander leaves and lime wedges, to serve

  1. Mix the chillies, maple syrup, cider vinegar, ginger and sesame oil in a small pan on low heat and bring to a simmer. Cook until slightly reduced, after 2-3 mins. Remove from the heat and leave to cool slightly.
  2. Coat the cocktail sausages in half the glaze, sprinkle with sesame seeds, place on a baking tray and cook in the centre of a preheated oven at 190°C (Fan 180°C)/Gas Mark 5 for 18-20 mins, turning halfway through cooking.
  3. Pour the remaining glaze into a small dish and scatter with some more sesame seeds. Serve the sausages scattered with some extra chillies and the coriander, with some lime wedges and the glaze on the side for dipping.
