Peri Peri Chicken Burger Mediterranean Wrap

Ingredients

  • Plain Flour x 200 grams (plus extra flour for rolling)
  • Greek yogurt x 200 grams
  • Baking powder x 1 teaspoon
  • Salt x 1 teaspoon
  • Za’atar spice
  • Red onions x 1
  • Tomatoes x 2
  • Pitted Black Olives x 50g
  • Cucumber x 1
  • Tzatziki x 2 tablespoons
  • Feta x 50g
  • Lemon x 1
  • Shoestring Fries x 100g
  • Paprika
  • Coriander
  • Edwards of Conwy Peri Peri Burgers

Method

  1. For the flatbread wrap: Mix the plain flour, greek yogurt, baking powder and salt together and knead for a minute or so, to bring it together. Roll into a ball and leave for ten minutes. Tip the dough out on to a clean work surface dusted with flour. Divide the dough into six equal pieces. With your hands, flatten one piece of dough, then use a rolling pin dusted with flour roll it into a round shape about 4-5mm thick. Add each flatbread to a dry pan and when firm and toasted give them a brush with a mix of oil and za’atar spice. Fry for one more minute on each side until crispy.
  2. Cook the Edwards of Conwy Peri Peri burgers by heating a little oil in a frying pan. Gently fry in a medium heat for 12 - 14 minutes, turning frequently.
  3. Build the Mediterranean wrap with the Edwards of Conwy Peri Peri Burgers, tzatziki, sliced tomato, sliced cucumber, pitted black olives, crumbled feta, coriander and a squeeze of fresh lemon. Serve with a side of shoestring fries dusted with paprika spice and coriander.
